Serious Chocolate Brownie

This is a seriously excellent brownie recipe and if you are a chocolate fiend then you’ll love this! Try it warmed with vanilla icecream. There is only one word for it – Yum.

100g cocoa (use high quality like Valrhona)
200g melted butter
2 cups caster sugar
4 eggs
1 tsp vanilla (get the real essence)
90g flour (just under 3/4 cup)
1 tsp baking powder
200g choc chips (get the best you can – even consider breaking up some dark Valrhona chocolate!)

Sift cocoa into a large bowl, add butter, sugar, eggs and vanilla. Mix to a smooth paste.

Sift in flour and baking powder, then add the choc chips. Mix well.

Pour into a 20cm x 30cm swiss roll tin - greased and lined (its one of those trays with the low edge – ask the Google God if you don’t know).

Bake at 150 Celsius for 60 minutes - no fan. The mixture should feel slightly undercooked when you take it out. Slice when completely cold.

Eat it all yourself – sometimes sharing is overrated...
